
Raw, it is quite firm. Lightly flavored but pleasantly sweet. There’s a slight astringent character to the finish. I even detected a ghost of a hint of nutmeg in there. As an eating apple it is an enormous example. Bit big for a snack, bit small for a meal.
Cooked, I have to say, it’s not a whole lot different. The flavor is only mildly changed and the texture is nearly as firm. If you are looking for a more toothsome apple to add to a dish, this is it. Though I would suggest dicing them small or slicing them quite thin.
