Very firm after baking, oddly the syrup did not thicken at all. The flavor, however, is almost perfect. When presented to my partner, her response was “that tastes like an apple pie!” Which is less obvious than it sounds. I agree actually, the flavor of this apple is sort of prototypical in that it reminds me of things like the old McDonalds or Hostess apple pie flavor.
It would definitely require mixing with the Granny Smith and/or Mutsu or similar to make the pie hold together, as it wouldn’t be able to carry a pie on its own, structurally anyway.
